The first tests were done in 1999, with a Canadian R&D Grant awarded in 2007 to further the research. Innovations included the first Tobacco Kiln white, the first Tobacco Kiln Sussreserve, and the first Tobacco Kiln wine made from grapes frozen to -10 degrees C.
In 2008 we shared our process with the owners of other local wineries, cementing Norfolk County's reputation as producing the best Appassimento in the world using grapes dried in retired Tobacco Kilns.
